About Beth Peralta Nutrition


Once upon a time (high school-trust me, it was long enough ago to use OUAT), I wanted to be an English teacher. I loved to read and write and, in the time before the internet, filled many, many journals full of stories and the usual teenage angst. English was my favorite subject in school and it came easily to me. I became interested in nutrition and health right around the time of college applications and switched my interest to nutrition & dietetics, leaving English and writing in the dust. Hello, chemistry, biochemistry, and food science; good-bye, liberal arts.

In college, I wrote lab reports and chart notes instead of essays and fiction, and as much as I enjoy my field, I have always felt the pull of writing.

And so, here I am. I’ve been a registered dietitian nutritionist (RDN) for nearly 15 years and have worked in hospitals, clinics, long-term care, and communications. My footing is solidly in science and evidence-based application that makes sense for real life. Foods and recipes that are full of flavor, better-for-you, and budget-friendly are my favorite.
